Whole Food Recipe for
Macaroni and Greens

Here is a Whole Food Recipe that is quick and easy!

Ingredients

  • 4 C. Broccoli florets
  • 8 oz. Whole wheat pasta
  • 3 Tbsp. Butter
  • 2 Tbsp. Whole wheat flour
  • 2 C. Milk (cow’s, soy, or almond)
  • ˝ tsp. salt
  • 2 C. Sharp cheddar cheese (shredded)
  • Dash of cayenne pepper and ground black peppers
  • 2 tsp. Spike seasoning

    Boil broccoli separately for about 3-4 minutes. Keep the broccoli water and use to boil the pasta according to directions.

    Melt the butter in a skillet and add the flour, stirring constantly about 2 minutes. Next add the milk and stir with a whisk until thick about 4 minutes. Add the salt and peppers and 2/3 of the shredded cheese stirring until melted. Remove from the heat. In a 2 quart oven proof dish add mix the pasta, cheese sauce and broccoli together. Cover the rest of the cheddar cheese and broil for about 3-4 minutes or until the cheese begins to brown and bubble.


    Healthy Cooking Tip

    Instead of bleached, white flour use whole wheat flour, amaranth, millet, quinoa, barley, spelt, rye, corn, oat or rice flours. White flour has little nutritional value and tends to clog the body with excess mucus, slowing the flow of chi in your body.
